God, Food, Run: Baked Veggie Fri Chik Recipe

This month's Recipe Redux theme called for fermented foods. I chose Greek yogurt as my fermented food of choice for my recipe. I have grown to enjoy this particular type of yogurt and realized it can also add a wonderful flavor to savory dishes. For vegetarian and non-vegetarian lovers, you just might want to give this simple meatless recipe a try.? This dish is low in saturated fat with a decent amount of that good-for-you fat...monounsaturated fat.

Ingredients:

1 can Fri Chik (sliced into long pieces)
1/3 of an onion chopped
1/4 cup of cream of mushroom soup
4 ounces of Chobani plain yogurt
1/2 tsp Pepper
1/2 tsp of Mushroom seasoning
1 cup of Daiya Mozzarella cheese
1/4 cup of panko bread crumbs

Directions:
Heat oven at 350 degrees.

In a small casserole dish, lay down the Fri Chik pieces.? Place onions on top of Fri Chik pieces and in between.? Pour cream of mushroom soup on top of Fri Chik and onions.? Take spoon and spread out cream of mushroom soup all over Fri Chik and onions.? Place Greek yogurt on top of Fri Chik, onions, and cream of mushroom soup layer.? Texas governor Perry's debate gaffe due to lack of sleep: book

(Reuters) - Texas Governor Rick Perry's embarrassing inability to remember a government department he would eliminate if he became president, perhaps the biggest gaffe of the 2012 election campaign, was due to chronic lack of sleep, a new book says.

"Oops," a diary of covering the Perry campaign by Texas Tribune correspondent Jay Root, says Perry suffered from insomnia for weeks before the gaffe.

The blunder occurred during a Republican presidential debate in Rochester, Michigan on November 9, 2011.

Trying to recall the three government departments he would eliminate if he became president, Perry said: "I would do away with the Education, the, uh, Commerce, and, let's see. I can't. The third one I can't. Sorry. Oops."

He paused for an agonizing 53 seconds before conceding that he could not remember the Energy department, the third agency he would close.

Book author Root, who covered the Perry presidential campaign from the summer of 2011 to its end in early 2012, said Perry had battled insomnia most of the campaign.

Perry stumbled in several debates and at one debate in Orlando, Florida, one of his answers was almost incoherent.

"Perry had kept in touch with his medical team, and by early October, days after the Florida fiasco, the campaign had urgently consulted sleep specialists, bringing them in to investigate.

"After conducting overnight tests on Perry, they produced a rather startling diagnosis: He had sleep apnea, and it had gone undetected for years, probably decades," Root says.

Perry's unraveling began in earnest after back surgery in mid-June, 2011. The Texas governor took pain killers for a few weeks after the surgery but refused to continue them because he said he wanted to be mentally sharp for the campaign.

By October, Perry was diagnosed with sleep apnea, a chronic condition in which a patient sleeps so lightly that he is constantly waking and breathing can stop for a moment. Perry was given a machine that helps breathing become more regular during sleep.

But at the same time he complained of pain in his leg and foot that might have been a result of the surgery. This kept him from sleeping, Root says.

A request for comment from the governor's office on Saturday did not receive an immediate response.

10 takeaways to follow for doing business in South America ...

September 21st, 2012

South America

A few months ago, during an exploratory mission in South America, I had the opportunity?of meeting?Mark Bonnell, CEO?of Modyo in Chile.

Today, Modyo?s core platform is used by large corporations and organizations such as Puma and Nestle to manage customer focused solutions. Modyo?s applications power global companies with enterprise content management across web and mobile worlds, educational solutions, customer support solutions and e-commerce. Last year, Modyo was the only Internet company selected to receive the most prestigious innovation award.
During his presentation, Mr Bonnell explained 10 takeaways?I found really interesting, and which?reflect my opinion on what companies should do when doing business in South America.?

10 takeaways:

- Latin America is a Social Network with circles of trust.

- Choose your first business friends very carefully. Separation is brutally painful.

- Become friends with a very reliable lawyer in each country.

- Take time when hiring people. Extend your hiring process. You cannot fire easily.

- Negotiate and double-check everything.

- Have more cash on hand?than needed. It will come in handy. Negotiate banking and factoring relationships when your numbers are good.

- Setting up a company is?slow. Multiply what the lawyer?s estimate by 3 times.

- Find the right angel investor. This is key.

- Try to avoid legal actions.

- Canadians are well-liked. Take advantage?of cold calling.

Finally, if you interested,?it?would be my pleasure to put you in contact with Mr. Bonnell.

How Does Arsenic Get into Rice?

Arsenic-laced rice products being reported in the news are not the result of breakfast cereals and baby foods being soaked in poison at the factory. Rather, various natural and man-made processes can cause the toxic element to accumulate in rice grains as they grow.

Scientists have been aware for years that rice is a major source of dietary arsenic, but Consumer Reports is leveraging a new study, which found arsenic in a wide range of rice products, to urge the Food and Drug Administration to set limits on arsenic levels in rice. The findings show that inorganic arsenic, a known carcinogen, is present in more than 60 popular rice products, including Kellogg's Rice Krispies, Gerber baby food and multiple varieties of Uncle Ben's rice.?

So how does arsenic, the preferred poison of political assassins in the Middle Ages, get into rice in the first place?

The toxin has both man-made and synthetic sources, and the portion that ends up in rice most likely draws from both. Arsenic, a shiny gray metalloid in its elemental form, occurs naturally in the Earth's crust and makes its way into soil and water supplies through ordinary weathering processes.

But the element also has common industrial uses, including in pesticides and wood preservatives. And according to the Environmental Protection Agency, inorganic arsenic (meaning simply a form of arsenic that has not bonded with carbon) has been shown to persist in the soil for more than 45 years.

Because of this, even dangerous arsenic-containing insecticides that are no longer in use, such as the lead-arsenate insecticides banned in the '80s, may continue to be absorbed by crops grown on contaminated soil for decades.

Inorganic arsenic's environmental staying power may help to explain why, according to Consumer Reports, rice grown in states in the south-central region of the United States has shown higher levels of arsenic than rice from other regions.

Elevated levels of arsenic in rice from Louisiana, Mississippi, Missouri and Texas may have their origin in that region's long history of cotton cultivation, an industry that extensively utilized lead-arsenate insecticides.

Another possible contributor to arsenic in farm soil is fertilizer from chickens, whose feed sometimes contains arsenic.

But none of these potential sources of arsenic are specific to rice-farm soil, so they don't explain why rice contributes more dietary arsenic than other grains grown in the United States (according to an EPA estimate, rice accounts for 17 percent of total dietary exposure).

The basis for rice's apparently outsized arsenic capacity seems to lie in the water-flooded conditions that are used in its cultivation, which foster the absorption of water-soluble arsenic into the roots.

As grains of rice take in arsenic, they accumulate a disproportionate amount in their outer hulls, which are stripped off if the grains are refined into white rice. This is why brown rice, which has some nutritional benefits when compared with white rice, has been found to contain more arsenic.

The FDA, which is conducting its own survey of the arsenic content of rice, does not yet have enough information to recommend that consumers change their rice consumption. But both the FDA and Consumer Reports recommend that consumers vary the grains they eat.
